NUTRITIONAL RECOMMENDATIONS
1. Consume plant-based proteins to drastically reduce the intake of saturated fats and cholesterol, that are always present in animal-based foods.
2. To maintain fat intake at low levels, use limited amounts of olive oil, margarine, sauces, mayonnaise and butter, when cooking vegetables and grains.
3. Use nuts and seeds that are rich in oil to enrich your breakfast or as a tasty addition to soups, pasta, salads, whole-wheat grains, pulses and vegetables.

Grains are the greatest category of cultivated food plants. The main categories of grain are wheat, rice, barley, rye and oats. They are rich in nutrients like B complex vitamins, folic acid, minerals and various antioxidants. They are also, rich in fibre that helps the digestive system and the intestine functions.
The carbohydrates of low glycemic index contained in the grains contribute to an increase of the feeling of satiety and fullness, helping in maintaining healthy body weight
Dried, edible legume seeds are called pulses.
All pulses have a high nutritional value as they constitute a rich source of complex, slow released carbohydrates, amino acids, fibre, vitamins and trace elements.
In addition, they are considered to be one of the main sources of plant-based protein, which, however, lacks the amino acid methionine. This amino acid can easily be included if pulses are accompanied by grains, nuts or seeds
The proteins contained in grains and pulses, if combined, complement one another and form a nutritious mixture of excellent quality that equals that of meat, fish, or eggs, which, however, does not contain any of the saturated fats that are harmful to our health.
