A medium-sized onion contains 20% of the daily vitamin C intake that we need and between 5-10% of the necessary daily B6 vitamin, folic acid, potassium and magnesium intake. The variety of antioxidants that are found in an onion is immense and among them is quercetin (also known as valanocetone), which has a strong anti-inflammatory effect. Among other benefits, onions have anti-cancer properties, provide protection against cardiovascular diseases and boost skeletal health. If we add to these numerous health benefits the nutritional characteristics of the rest of the ingredients of this rich soup, we get a meal of high nutritional value that boosts our health, is cooked easily and is delicious.EASY TO COOK Soup For 1 cup of product add 6-7 cups of water. Boil for 12-15 minutes in medium heat, according to how thick you want it to be. Just before the end of the boiling process, add a bit of olive oil. If you wish to have a velvety texture, puree the soup with an immersion blender. Adjust the lemon, salt and pepper according to your preferences. Serve with grated feta cheese and croutons or bruschetta (coat the top of bread slices with a little bit of garlic, drizzle olive oil over them and bake. At the end, add grated cheese on top of the bread so that it is also slightly baked.).
